A Little Something Green...

Top O' the mornin' to ya...
Scruffy O'Bear here, I'll be bringing you this special St. Patty's Day post. My brother Buttons O'Bear is suffering a wee case of bearangitus. Also, because he
was not allowed in my grandma's kitchen, he needed my help to report on the preparations.
Grandma cooked us a lovely Irish dinner last evening. She was carving the corned beef when I arrived.
Yum, cabbage all be it not boiled, but stir-fried with a little onion, soy sauce and close your ears Sullivan, bacon. We also had boiled new potatoes, roasted carrots, Irish soda bread & corn muffins.
For desert we had what turned out to be a pie smorgasbord.  Grandma's good friend surprised her by bringing a cherry pie and
a banana Creme Pie. Oh my! My grandma had made a special green pie in honor of the day.
She said we could share the recipe with you.
Lime Parfait Pie
6 oz. Lime Jell-O
2 c. boiling water
1 tsp. Lime Zest
1/3 c. Lime Juice
1 qt. Vanilla Ice Cream - softened
10" pie shell or graham cracker crust
whipped cream or topping

Dissolve Jell-O & boiling water. Stir in lime zest and juice; add ice cream; stir until melted. Chill
until mixture mounds; pour into pie shell or crust. Refrigerate until set. Serve with whipped
cream or topping.

Thanks Scruffy _ I'm going to make that pie for Sunday lunch. Sure and I'm missing the Shamrock Isle just now, living here in the wilds of Wales, but I have a real Mammy and Daddy now, so I wouldn't be going back to live there now. But (are you listening Mammy?) a weekend break in Dublin and a few drafts of Guiness would be so welcome at this time of year .... Top of the morning to you, Scruffy.

I hope you all had a good St. Patrick's Day! My mom was in Minnesota to see an author signing, so we didn't have much fun!
